Before you can tame beasts like the white wolf, you have to progress a bit in the story and get bait in your inventory. This way you can attract nearby beasts and tame them. You will also need the perk in the skill that let's you tame certain animals.
Bests like the wolf can attack enemies and will be your personal guard as long as you keep them alive. You can heal them by feeding him meat.
